Heat olive oil in a pan over medium-high heat. Add beef mince, brown, then stir in remaining spice mix and cook until moisture evaporates.

Mix mayonnaise, ketchup, dijon mustard, pickle juice, garlic powder, and smoked paprika in a bowl. Adjust to taste.

Divide chips and lettuce between bowls. Top with beef, cheese, and pickles. Drizzle burger sauce over and serve.
