Line a baking sheet with parchment paper and spray with vegetable oil cooking spray. Insert craft or thick wooden sticks halfway into the stem ends of each apple.

In a medium heavy saucepan over low heat, combine caramel candies and orange juice. Stir occasionally until candies melt and mixture is smooth, about 10 minutes. Remove from heat and cool for 2 minutes.

Dip each apple into the caramel mixture until coated. Place coated apples on the prepared baking sheet and allow to set until firm, approximately 2 hours.

Place chopped dark chocolate in a medium bowl set over a pan of barely simmering water. Stir until chocolate is fully melted and smooth.

Drizzle melted chocolate over caramel-coated apples using a fork. Return apples to the baking sheet and rest for 10 minutes. Sprinkle with assorted candies, chopped nuts, or sprinkles. Let chocolate harden at room temperature for 3 to 4 hours.
