# Preparation Steps:

01 - Place chicken breasts between two sheets of parchment paper and pound evenly with a meat mallet to 0.25 inch thickness. Season both sides with salt, pepper, and Italian seasoning.
02 - In a medium bowl, combine ricotta, mozzarella, Parmesan, sautéed spinach, garlic, and nutmeg. Stir until well blended and creamy.
03 - Spoon 2 to 3 tablespoons of filling onto the center of each chicken breast. Roll tightly, tucking in the sides as possible. Secure with toothpicks or kitchen twine.
04 - Set up dredging stations with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan. Dredge each roll first in flour, then eggs, and coat evenly with breadcrumb mixture. Place seam-side down in a greased baking dish.
