Add green beans to the crockpot. Pour in vegetable broth. Sprinkle taco seasoning, smoked paprika, cumin, onion powder, black pepper, brown sugar, and minced garlic evenly over the beans. Add lemon zest and lemon juice.

Dot butter over the beans and toss thoroughly with tongs or clean hands to evenly coat with broth, butter, and seasonings.

Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 2.5 hours until beans are tender but still crisp. Toss beans once or twice during cooking to ensure even seasoning.
