02 - 4 slices Texas toast bread
03 - 2 slices Colby Jack cheese
04 - 2 slices pepper jack cheese
05 - 3 tablespoons unsalted butter, softened

07 - 1/8 teaspoon freshly ground black pepper

# Preparation Steps:

01 - Spread a thin layer of softened butter on one side of each slice of Texas toast and set aside, buttered side facing up.
02 - Melt 1 tablespoon butter in a skillet over low heat. Crack in the eggs and fry until whites are set and yolks reach your desired doneness, about 3–4 minutes. Sprinkle lightly with salt and pepper. Transfer eggs to a plate.
03 - Place one slice of bread buttered side down in a clean skillet over medium-low heat. Top with one slice of Colby Jack cheese.
04 - Place two fried eggs over the Colby Jack cheese. Lay one slice of pepper jack cheese on top of the eggs.
05 - Top with a second slice of bread, buttered side up. Cover the skillet with a lid to help the cheese melt evenly.
06 - Cook sandwich until bottom is golden brown, about 2–3 minutes. Carefully flip with a spatula and grill the other side until crisp and cheese is fully melted, another 2–3 minutes.
