Preheat oven to 350°F. Line two cookie sheets with silicone mats or parchment paper.

In a large bowl, stir together peanut butter, brown sugar, granulated sugar, eggs, baking soda, and salt until smooth and well incorporated.

Using a small cookie scoop, portion dough onto prepared sheets, spacing each 2 inches apart.

Optionally, press cookies with fork tines in a crisscross pattern to slightly flatten them.

Bake for 10 to 12 minutes until cookies are puffed and edges are golden brown.

Allow cookies to cool on sheets for 3 minutes, then transfer to a wire rack to cool completely. Cookies will deflate slightly as they cool.
