01 - ⅔ cup mayonnaise or plain yogurt
02 - 1 tablespoon taco seasoning
03 - 2 tablespoons fresh lime juice
04 - 2 cups shredded green cabbage
05 - 1 cup shredded red cabbage
06 - 1 to 2 large carrots, shredded
07 - 3 to 4 green onions, chopped
08 - ½ cup fresh cilantro leaves

09 - 4 cod fillets, 6 ounces each
10 - 3 tablespoons olive oil
11 - 1 tablespoon taco seasoning

→ Salsa

12 - 1 tablespoon olive oil
13 - ½ red onion, diced
14 - ½ red bell pepper, seeded and finely diced
15 - ½ jalapeño pepper, seeded and finely diced
16 - 1 cup frozen corn kernels, thawed
17 - 1 (14.5 oz) can black beans, rinsed and drained
18 - ½ fresh lime
19 - 2 green onions, sliced

20 - 1 avocado, sliced or cubed
21 - Lime wedges
22 - Fresh cilantro sprigs

# Preparation Steps:

01 - Whisk together mayonnaise (or plain yogurt), taco seasoning, and fresh lime juice in a small bowl.
02 - Combine green and red cabbage, shredded carrot, chopped green onion, and cilantro leaves in a medium bowl. Add ¼ cup of the dressing and toss thoroughly. Reserve remaining dressing for serving.
03 - Pat cod fillets dry with paper towels. Brush exposed surfaces with olive oil and sprinkle evenly with taco seasoning.
04 - Heat 2 tablespoons olive oil in a heavy skillet over medium-high heat. Place fillets seasoned side down and brush tops with oil, sprinkling with additional taco seasoning. Cook undisturbed for 4 minutes until fish releases naturally. Flip and cook for 3 to 4 minutes more. Transfer to a plate, cover loosely with foil to keep warm.
05 - In the same skillet, heat 1 tablespoon olive oil. Sauté diced red onion, bell pepper, and jalapeño for 1 minute. Stir in corn kernels, black beans, and seasoning. Cook another 1 to 2 minutes. Remove from heat, squeeze juice of ½ lime over salsa, add sliced green onions, and toss to combine.
06 - Divide slaw and salsa evenly among four serving bowls. Top each with one cod fillet and ¼ of the avocado cubes. Garnish with lime wedges and cilantro sprigs.
