Preheat the oven to 375°F. Line a baking sheet with parchment paper.

In a skillet, combine diced apples, brown sugar, cinnamon, flour, and lemon juice. Cook over medium heat until apples soften, about 5 to 7 minutes. Remove from heat and let cool.

Roll out pie crusts and cut them into rectangles measuring approximately 3 by 4 inches.

Place filling on half of the dough rectangles, leaving edges clear. Brush the edges with beaten egg.

Cover with remaining dough rectangles. Press edges firmly with a fork to seal and poke small holes on the top surface to vent steam.

Brush the tops with beaten egg and bake for 20 to 25 minutes until golden brown.

Allow to cool slightly before applying the glaze made from powdered sugar mixed with milk and optional cinnamon or caramel drizzle.
