In a large bowl, whisk together the flour, granulated sugar, and salt. Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, stirring gently until the dough just comes together. Shape the dough into a flat disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Toss the sliced apples with granulated sugar, flour, cinnamon, honey, and lemon juice until evenly coated and glossy.

Lightly flour a work surface. Roll the chilled dough into a rough 12-inch circle about 1/8 inch thick. Carefully transfer it to a parchment-lined baking sheet.
