Kiwi Blueberry Mojito Cocktail (Printer-Friendly)

Fresh kiwi and blueberries combine with mint, rum, and sparkling water for a bright, festive summer drink.

01 - 4 medium ripe kiwis, peeled and roughly chopped
02 - 1 cup fresh blueberries, divided (3/4 cup for muddling, 1/4 cup reserved for garnish)

04 - 1/2 cup freshly squeezed lime juice (about 4 large limes)

# Preparation Steps:

01 - Pulse the chopped kiwis, sugar, and lime juice in a food processor until a coarse, pulpy puree forms with some texture remaining.
02 - Transfer the kiwi puree to a large pitcher. Stir in the light rum, starting with 3/4 cup and tasting before adding more to preference.
03 - In a small bowl, use a muddler or the back of a spoon to gently crush 3/4 cup blueberries until just releasing juices but not pureed.
04 - Run a lime wedge along each glass rim, then dip rims into colored decorating sugar or sprinkles until coated.
05 - Layer half of the ice and half the mint leaves into the pitcher. Scatter in the crushed blueberries and a few kiwi slices. Add the remaining ice and mint, then gently top with reserved whole blueberries.
06 - Pour the chilled sparkling water into the pitcher, stirring gently to combine without losing effervescence. Taste and adjust sweetness or alcohol as needed. Pour into prepared glasses, garnish with additional mint, kiwi slices, and blueberries as desired.
