07 - 1 tablespoon olive oil

# Preparation Steps:

01 - Combine chopped spinach, diced cherry tomatoes, finely chopped red onion, mozzarella cheese, and crumbled feta in a medium bowl. Mix thoroughly to evenly distribute cheese and vegetables.
02 - Lay each tortilla flat and spread a quarter of the filling over half of each tortilla, covering the surface up to the edge. Fold tortillas in half to enclose the filling and press gently to seal.
03 - Heat olive oil in a 10-inch skillet over medium heat. Place filled tortillas in the skillet and press with a spatula. Cook each side for 3–4 minutes, until the exterior is golden and cheese becomes fully melted.
04 - Transfer cooked quesadillas to a cutting board and let cool for 1 minute. Slice each into wedges and serve warm with salsa, sour cream, or your favorite dip.

# Additional Suggestions:

01 - Allow quesadillas to cool briefly before cutting to keep fillings intact.
02 - For crisper results, wipe out the skillet between batches to avoid bitterness.
03 - Substitute spinach with arugula or kale if desired.
04 - Store leftovers between paper towels in an airtight container in the refrigerator for up to 2 days.
