Combine chopped spinach, diced cherry tomatoes, finely chopped red onion, mozzarella cheese, and crumbled feta in a medium bowl. Mix thoroughly to evenly distribute cheese and vegetables.

Lay each tortilla flat and spread a quarter of the filling over half of each tortilla, covering the surface up to the edge. Fold tortillas in half to enclose the filling and press gently to seal.

Heat olive oil in a 10-inch skillet over medium heat. Place filled tortillas in the skillet and press with a spatula. Cook each side for 3–4 minutes, until the exterior is golden and cheese becomes fully melted.

Transfer cooked quesadillas to a cutting board and let cool for 1 minute. Slice each into wedges and serve warm with salsa, sour cream, or your favorite dip.
