Combine diced peaches and granulated sugar in a large bowl. Stir well to fully coat. Cover securely and refrigerate for 24 to 48 hours, mixing once or twice during this time to extract juices.

Pour the peach mixture through a fine mesh strainer into a clean bowl. Press fruit to release all liquid. Reserve the strained fruit for another use.

Bring 4 cups of water to a boil. Place tea bags in a heatproof pitcher or bowl. Pour hot water over tea bags and steep for 5 minutes. Remove tea bags, then add 2 cups of cool water to the tea. Let cool to room temperature.

Pour the cooled brewed tea into a large pitcher. Stir in reserved peach syrup and 2 tablespoons lemon juice. Taste and adjust sweetness or lemon as desired. Chill in the refrigerator until cold or serve immediately over ice.

Fill serving glasses with ice cubes. Pour peach iced tea over ice. Garnish each glass with a fresh peach slice and a sprig of mint before serving.
