01 - 4 medium ripe peaches, diced
02 - 1 cup granulated sugar

04 - 4 black or green tea bags
05 - 2 cups cool water

# Preparation Steps:

01 - Combine diced peaches and granulated sugar in a large bowl. Stir well to fully coat. Cover securely and refrigerate for 24 to 48 hours, mixing once or twice during this time to extract juices.
02 - Pour the peach mixture through a fine mesh strainer into a clean bowl. Press fruit to release all liquid. Reserve the strained fruit for another use.
03 - Bring 4 cups of water to a boil. Place tea bags in a heatproof pitcher or bowl. Pour hot water over tea bags and steep for 5 minutes. Remove tea bags, then add 2 cups of cool water to the tea. Let cool to room temperature.
04 - Pour the cooled brewed tea into a large pitcher. Stir in reserved peach syrup and 2 tablespoons lemon juice. Taste and adjust sweetness or lemon as desired. Chill in the refrigerator until cold or serve immediately over ice.
05 - Fill serving glasses with ice cubes. Pour peach iced tea over ice. Garnish each glass with a fresh peach slice and a sprig of mint before serving.
