Heat olive oil in a skillet over medium heat. Add sliced smoked sausage and sear until lightly browned, about 2 to 3 minutes per side. Stir in diced onion and minced garlic, sautéing until translucent and fragrant, approximately 2 to 3 minutes.

Transfer the browned sausage, onion, and garlic into the slow cooker. Add shredded cabbage, diced potatoes, sliced carrot, diced celery, chicken broth, vegetable bouillon cube, apple cider vinegar, dried oregano, salt, and black pepper. Stir gently to combine.

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are fork-tender and cabbage is soft. Stir occasionally if possible to enhance flavor melding.

Taste and adjust seasoning as desired, adding extra salt or apple cider vinegar to brighten the flavors. Ladle into bowls and optionally garnish with cracked black pepper, a drizzle of olive oil, or chopped fresh parsley.
