01 - Wash, peel, and either boil the sweet potatoes for 20–30 minutes or roast at 400°F for about 45 minutes until tender. Mash warm sweet potatoes until smooth and measure 1½ cups.
02 - Peel, core, and coarsely grate Gala apples. Lightly squeeze grated apples to remove excess moisture while retaining some juice for flavor and moisture.
03 - In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until spices are evenly distributed.
04 - In a separate bowl, beat vegetable oil, brown sugar, eggs, and vanilla extract until smooth. Stir in mashed sweet potatoes, then gently fold in grated apples.
05 - Add the wet mixture to dry ingredients and fold gently with a spatula until just combined, avoiding overmixing to maintain a tender crumb.
