Allow all cheeses to come to room temperature for 15 minutes before cooking.

Preheat oven to 400°F (200°C). Arrange bacon strips on a baking sheet and cook for 15 to 20 minutes until crispy. Set aside.

Heat a large skillet or griddle over medium-low heat.

Generously butter one side of each bread slice.

Place bread slices butter-side down on the skillet. On half of the slices, layer sharp cheddar, Monterey Jack, and Provolone cheeses. Add 2 bacon strips per sandwich, then drizzle ranch dressing over the toppings. Top with remaining bread slices, butter-side up.

Cook sandwiches for 3 to 4 minutes on the first side until golden and crispy. Flip carefully and cook an additional 3 to 4 minutes until the second side is golden and the cheese is melted completely.

Remove sandwiches from heat and let rest for 1 minute. Cut diagonally and serve immediately while cheese remains warm and stretchy.
