Air Fryer Zucchini Parmesan (Printer-Friendly)

Zucchini rounds coated in parmesan and herbs, air-fried for a golden, crunchy snack or veggie side, ready in minutes.

# List of Ingredients:

→ Main

01 - 2 medium zucchinis, firm and bright green, sliced into 1/2 inch thick rounds
02 - 1 large egg

→ Coating

03 - 1/2 cup dry breadcrumbs or panko
04 - 1/3 cup freshly grated Parmesan cheese (preferably Parmigiano Reggiano)
05 - 1 teaspoon garlic powder
06 - 1 teaspoon dried Italian seasoning
07 - 1/2 teaspoon kosher salt
08 - 1/4 teaspoon freshly cracked black pepper

→ Finishing

09 - Cooking spray (olive oil recommended)

# Preparation Steps:

01 - Rinse zucchinis thoroughly and trim both ends. Cut each zucchini into uniform 1/2 inch thick rounds.
02 - In a shallow bowl, combine breadcrumbs, grated parmesan, garlic powder, Italian seasoning, salt, and pepper. Stir thoroughly to distribute seasoning evenly.
03 - Crack egg into a separate shallow dish and beat until blended.
04 - Dip each zucchini slice in the beaten egg, allow excess to drip off, then press into the breadcrumb and parmesan mixture to coat both sides completely.
05 - Place coated zucchini slices in a single, non-overlapping layer in the air fryer basket for even cooking.
06 - Generously mist zucchini slices with olive oil cooking spray. Set air fryer to 400°F (204°C) and cook for 5–6 minutes. Flip each piece using tongs, spray again, and cook an additional 5–6 minutes until golden and crunchy.
07 - Transfer hot zucchini parmesan to a platter and serve promptly for optimal crispness. Optional: Garnish with fresh herbs or serve alongside marinara sauce.

# Additional Suggestions:

01 - For the best crunch, do not crowd the air fryer basket; ensure slices are in a single layer for even browning.
02 - Panko breadcrumbs provide an extra light and airy crust—substitute for standard breadcrumbs if desired.
03 - Allow zucchini slices to cool before storing in an airtight container lined with a paper towel; reheat in air fryer at 375°F for 3–4 minutes.
04 - Use cold zucchini for a firmer texture and intensified fresh flavor.
