In a mixing bowl, whisk together pancake mix, egg, whole milk, and 1 tablespoon vegetable oil until the mixture forms a smooth, thick batter. Allow the batter to rest for 5 minutes for optimal coating.

Lay out the graham cracker halves. Place one segment of chocolate and one marshmallow between two halves to form a sandwich. Press the sandwiches gently to secure.

Pour vegetable oil into a deep, heavy-bottomed pot to a depth of about 3 inches. Heat the oil to 375°F (190°C), using a thermometer for accuracy.

Using tongs, dip each s'more sandwich into the prepared batter, turning to coat evenly. Gently shake off excess batter before frying.

Carefully lower the coated s'mores into the hot oil with tongs. Hold each for a few seconds to help set the batter before releasing. Fry in batches for 3–4 minutes, turning as needed, until golden brown.

Remove the fried s'mores with a slotted spoon and transfer to a plate lined with paper towels. Allow to cool for 5–10 minutes before serving for a molten center and safe handling.
