# Preparation Steps:

01 - Place scallion pieces in a small bowl of very cold water to shock them. Let sit until scallions curl, then drain and pat dry.
02 - Whisk together mayonnaise and Sriracha in a small bowl until smooth. Set aside.
03 - Heat canola and olive oil in a medium skillet over medium-high heat. Once hot, add SPAM slice and cook about 2 minutes per side until crispy. Transfer to a paper towel-lined plate.
04 - In the same pan, cook the egg to preferred doneness.
05 - Spread spicy mayo on both sides of the toasted roll. Layer fried SPAM, cooked egg, and curled scallions on one half, then top with the other half. Serve immediately.
